Date Energy Balls - Chocolate Peanut Butter

Ingredients
1 cup pitted dates1/2 cup Peanut Butter1 1/3 cup Oats1 1/3 cup Unsweetened Coconut3 TBSP Cocoa powder1.5 tsp vanilla
Directions
Soak dates in hot water in a measuring cup for 3-4 hours. Drain off most of the water until the water is at the 1/2 cup level in the measuring cup. Blend dates with immersion blender.
Mix all ingredients together. Consistency should be similar to a slightly dry cookie dough. If it is too wet add more oats and coconut. If too dry add more water.
Form into balls. Refrigerate 1 hr.
