Bavarian Style Red Cabbage

2 Tbsp. olive oilI large head red cabbage, shredded1 large onion, sliced thin1 Granny Smith Apple, chopped or coarsely grated1 cup unsweetened apple juice1 cup red wine vinegar1 cup brown sugar1/4 tsp. freshly ground nutmeg1/2 tsp. grounds cloves1/2 tsp. caraway seeds (optional)kosher salt & pepper, to taste
In a deep non-stick Dutch Oven, heat olive oil.
Add onions and cook till slightly tender (about 3 min)
Add cabbage and saute for 2-3 minutes.
Add all liquid ingredients and spices
Bring to a gentle simmer, cover and allow to cook for 30-45 minutes. Salt & Pepper, to taste.
Cabbage should be cooked, but not mushy.
