Coconut curry vegetables

Ingredients
1 cup, chopped Onions, raw 1 tbsp Sunflower Oil 74 gram(s) bell pepper, red, sweet, raw 4 cup, cubes Sweet potato 2 cup Zuccini Squash 3 serving Keens traditional curry powder (5g per serve) AUS (by STRANGELING88) 2 serving coconut milk half tin (by SKIPPY1311)
Directions
Heat oil in a pan, add chopped onion, and saute,
add capsicum and continue to cook.
add chopped sweet potato and stir while cooking for a minute or so
Add curry powder and stir well
Add can of coconut milk and stir together
cover and cook on simmer for 10 minutes.
add chopped zuccini and cook uncovered another 10 minutes. serve
