2 large Egg, fresh, whole, raw 1 serving Sweet potatoe - medium (2"x5"), 114 g 2 serving Louis Rich Turkey Bacon (1 slice) .3 tbsp "LouAna" Pure Coconut Oil
Heat oven to 400, chop bacon into small pieces, in a pan over medium heat add 1 tsp coconut oil, add bacon, cook 2-3 minutes on each side until crispy, remove bacon from pan and set aside. In the same pan add spiralized sweet potatoe and cook for 4 minutes over medium heat. In 2 ramekins, add 1/2 sweet potatoe and 1/2 bacon to bottom of each ramekin, crack and add 1 egg to each ramekin. Bake 15-20 minutes until eggs are baked to your liking.
