Gorton pork spread, (pate), AKA Canadian Cretons

1 1/2 lbs Pork, fresh, ground, raw 4 tbsp Leaf Lard 1/4 cup, chopped Onions, raw 1/2 cup Milk, 3.25% Water to cover1 tsp salt1/2 tsp+ pepper1/2 tsp+ cinnamon, ground1/2 tsp+ cloves, ground1/2 tsp+ allspice
Break up the pork in medium/large saucepan. Add remaining ingredients except cinnamon, cloves and allspice to saucepan and let simmer for about 2 hours, stirring occasionally. Add additional water if necessary to avoid burning. When well broken down and most of water gone, add the spices and stir well. Leave over very low heat until all water is absorbed. Transfer to food processor to smoothe out like a pate. Transfer to smaller storage containers. Can be frozen.
