Ingredients
1.0 cup, shredded Cheddar Cheese1.0 cup (not packed) Cottage Cheese, 2% Milkfat4.0 tbsp Parmesan Cheese, grated6.0 large Egg, fresh, whole, raw0.5 cup, chopped Onions, raw6.0 serving yellow & green Zuchini
Directions
Beat eggs. Slice zucchini and squash thinly and cut into quarters (zucchini) or 9ths (squash). Stir into eggs. Add cheeses, cottage cheese, pepper and Italian or provence seasoning and spoon into 12 greased muffin cups. Bake at 375 for 30 minutes or until tops are golden brown. Serving Size: Makes 12 individual frittatas
