Field Pea & Corn Salsa

Ingredients
1 can field peas – rinsed & drained1 can shoepeg corn – drained1 medium jar chopped pimentos (drained)1 medium purple onion – chopped1 green bell pepper – chopped½ cup chopped fresh cilantroMarinade:½ cup Splenda½ cup olive oil¼ cup white vinegar1 Tbsp. tiger sauce
Directions
Combine all vegetable ingredients in large covered bowl.

Combine all marinade ingredients together and mix thoroughly. Pour marinade over pea & corn mixture, mix well and cover. Marinate for at least a few hours – preferably overnight.

Serve with Tostitos scoops. Or use as a relish over chicken. Serves 10.
