Roasted Sweet Potatoes, mushroom and onion

Ingredients
4 cup, cubes Sweet potato (peeled)1 Red Onion Raw cut into 12 wedges8 ounces Mushrooms, baby Bella cut in half 3 clove Garlic crushed4 tbsp Extra Virgin Olive Oil 1 tsp Salt 0.5 tsp Pepper, black 1 tsp Ground Coriander
Directions
Preheat oven to 400 F Toss together all ingredients in large bowl- coat with spices evenly. Spread in single layer on sheet pan. Bake 40 to 50 minutes, stirring halfway through until potatoes are tender. Serving Size: 1 cup
