pumpkin bisque

Ingredients
1 large Onions, raw 4 oz Dry Vermouth 4 cup Vegetable Broth 0.5 tsp Cinnamon, ground 0.5 tsp Nutmeg, ground 3.5 cup Pumpkin, canned, without salt 1.5 tsp Salt 0.5 tsp Pepper, black 0.25 cup Maple Syrup 2 tbsp Butter, unsalted 1 cup, fluid (yields 2 cups whip Heavy Whipping Cream
Directions
in food processor or mortar and pestle, pulverize the onion so you'll have a smooth soup.
cook onion (recipe also called for garlic), bouillon, spices in butter until it starts to brown.
deglaze pan with vermouth
add broth, 29 ounces of pumpkin, salt and pepper and simmer for a few minutes
add maple syrup and simmer just until incorporated
turn off heat and mix in cream

recipe called for a full cup of syrup, but this is already aggressively sweet.
