Creamy Spinach and Brown Rice

Ingredients
1.5 cups sliced fresh mushrooms1/2 cup thinly sliced leek, white part only2 tsp butter2 cups skim milk1/2 cup brown rice1/3 cup shredded low-fat Swiss cheese1 Tbs chopped fresh thyme or 1 tsp dried thyme1/8 tsp black pepper2 cups chopped stemmed washed spinach
Directions
Cook and stir mushroooms and leek in margarine in medium saucepan over medium-high heat until leek is tender. Add milk and brown rice. Bring to a boil over medium-high heat. Reduce heat to medium-low. Cover; simmer 45 to 50 minutes or until rice is tender, stirring frequently. Remove from heat.

Add cheese, thyme, and pepper. Cook and stir until cheese melts. Stir in spinach. Cover; let stand 5 minutes.

    This is fantastic. My husband makes it all the time. We do not do it with the rice; we just make it as a side with the spinach and mushrooms. We don't use leak; we use shallots. - 10/8/10

    We had this for dinner tonight. I didn't have swiss cheese, so substituted shredded parmesan. It was delicious. There's one serving left over which is for lunch tomorrrow. Yum! - 5/10/09
