8 cups Kale, raw, stems removed, torn into bite-sized pieces2 cups Trader Joe's Healthy 8 Chopped Veggie Mix 1/2 cup Fresh gourmet oven roasted sliced almonds 1/4 cup white vinegar 1/4 cup Kroger Poppyseed Dressing
In a large bowl, combine the kale, Veggie Mix, and almonds.
In a small bowl or mixing cup, mix the poppyseed dressing and the white vinegar until well blended. Pour over the salad mixture.
Toss. Refrigerate or serve immediately. It keeps well in the refrigerator for a couple of days and the kale will soften a little if made ahead several hours.
