Lower Fat Zucchini Casserole

Ingredients
2 Medium zucchinis (may also use squash) sliced3/4 cup sliced carrots (pre cook them a bit if you would like)1/2 Cup chopped onions2 TBS light margarine spread1/2 10 oz can of 98% Fat Free Cream of Chicken Soup1/4 Cup reduced fat sour cream1 cup cubed herbed stuffing
Directions
Saute onion in 1.5 TBS of margarine. Stir in 3/4 cup of stuffing mix, sour cream, and soup.
Gently stir in veggies.
Put in lightly greased casserole dish.
Melt remaining margarine in pan and add last 1/4 cup of stuffing.
Toss gently and sprinkle over casserole.
Bake 30-40 minutes in 350 degree oven.
