64 oz Pork Shoulder (pork butt, picnic roast) 4 tbsp Extra Virgin Olive Oil 2 medium (2-1/2" dia) Onions, raw 4 clove Garlic 3 tbsp Posole Seasoning, The Fresh Chile Co. 2 serving 1 Jar Pure Green Chile, The Fresh Chile Co, Hatch Green Chiles 1 cup Campbell's low sodium chicken broth 6 large (3" to 4-1/4" dia.) Potato, raw
Trim the pork and cube into 1 inch pieces.
Add the olive oil and cubed pork into a large skillet, then add the Posole seasoning, 3-5 tablespoons. Heat the skillet to Medium/Medium high or about 375 degrees. Brown the pork cubes, then add to a large crockpot.
Add the onions, fine diced, to the skillet, cooking until translucent. Dice the garlic and add, cooking for about 1 minute, making sure not to burn the onions or garlic.
Add the garlic and onions to the crockpot.
Peel and dice the potatoes, wash and pat dry. Cube the potatoes to 1 inch dice, then add to the crockpot.
Add the 2 jars of the Pure Green Chile, stir together all ingredients in the crockpot, then put on the lid. Set the crockpot on high for 4-5 hours OR low for 7-8 hours.
Serve with rice, cheese, sour cream or thin sliced radishes.
Personally I used the following and highly recommend them.

The Posole seasoning and Pure Green Chile jars I obtained from online sources. The Queso Mama White Queso I found at Costco.
I trimmed the pork to get the leanest cubed pieces. Any pieces with fat, gristle or bone I put in a zip lock bag to use later for making pork stock. I keep a list of all potential meals and my wife told me I had to add this recipe and meal to the list.
If you pass on this recipe and do not try it, you are truly missing one of the best tasting meals in life.
