Shrimp Stuffed Mushrooms

6 oz Baby Bella Mushrooms (about 8 mushrooms).25 cup, chopped Onions, raw .5 T Olive Oil 1 clove Garlic, pressed2 oz Neufchatal Cheese (low fat cream cheese)3 oz Cooked Cocktail Shrimp, chopped1.5 T Liquid Egg Product (3 T = 1 egg)2 T Cornbread stuffing crumbs .25 cup Parmesan Cheese, grated 1 T minced fresh Parsley.5 T chopped Fresh Chives Black pepper to taste
Separate the stems from the mushrooms. Chop them finely.
Saut� the chopped mushroom stems with the chopped onion, with the olive oil. When cooked, press in the garlic and cook just a little bit more to bring out the garlic aroma. Put the cooked mixture in a small mixing bowl.
Add all remaining ingredients to the bowl. Mix well.
Oven s/b set to 375 F.
Put about a T of the mixture into each mushroom cap. Use your fingers to help get the mixture down into the cap.
Bake for 20 minutes.
