Low Fat High Protein Taco Soup

Ingredients
Directions
Non stick cooking spray32 oz. ground turkey, 93% lean 1 cup, onions, chopped 1 (15 oz.) cans chili Beans 1 (15 oz.) can kidney beans10 oz. frozen corn1 (16 oz.) can tomato sauce3 c water2 (15 oz.) cans fire roasted diced tomatoes2 pkgs. low sodium taco seasoning
Crock Pot directions
1. Spray a large skillet with nonstick cooking spray. Add the ground turkey and cook over medium heat until turkey is browned. Move to crock pot.
2. Add all other ingredients to crock pot and stir well.
3. Cover and cook on low setting for 8 hours.
Stove top directions
1. Brown beef with onions in a medium soup pot or Dutch oven.
2. Add remaining ingredients, stir and simmer for 20 minutes.
Additions: This would be even more delicious if you add some cilantro, low-fat cheese, and/or low-fat sour cream.
This recipe yields 8 servings of about 1 1/2 cups
