Italian Chicken and Green Beans

4 Chicken Thighs, boneless and skinless1 cup chopped onion1Tbsp Olive oil1 tsp garlic, minced2 (14.5 oz) cans French Style Green Beans (drained)1 (14.5 oz) can Hunts Fire Roasted Tomatoes with Garlic (undrained)1.5 tsp italian seasoning1 Tbsp Balsamic Vinegar2 oz Feta Cheese (optional)
Heat olive oil in a large skillet. Add onions and cook until almost tender.
While onions are cooking, cut chicken thighs into bite size pieces. Add to onions in skillet along with the garlic, and saute until chicken is no longer pink.
Add the green beans, tomatoes, and italian seasoning. Cover and simmer 20 minutes, or until chicken is cooked all the way through. Add balsamic vinegar and simmer 5 min more.
Ladle into bowls and if desired top each serving with .5 oz of feta cheese.
