Slow Cooker Cabbage, Apple, and Carrots with Pork Loin Chops

1 medium head of cabbage, cored and chopped3 apples, cored and diced (leave skin on)1 sweet onion, chopped (about 5 oz)3 carrots, peeled and sliced2 tbsp. cider vinegar1/2 tsp salt1 tsp. nutmeg1 bay leaf, crumbles2 tsp. fennel seeds1 tsp. rosemary1 lb. boneless pork loin center cut chops, trimmed of visible fat
In a 4.5-qt slow cooker, combine all ingredients (except the pork chops) and stir. Mash down a bit if you feel like you don't have room for the chops (it will seem very full at first but the cabbage will cook down quite a bit).
Place unseasoned chops on top.
Cook on low for about 6 hours or until chops are no longer pink in the center.
