Salmon Cakes (Mom's recipe)

Ingredients
6 oz Pink Salmon (fish) -skin and bones removed1 large Egg, fresh, whole, raw 12 Premium Plus Whole Wheat Soda Crackers1 tbsp Extra Virgin Olive Oil
Directions
Remove skin and bones (if desired) from salmon. Add 6 crushed crackers and egg and mix well. Form into 2 patties. Crush remaining 6 crackers and coat each side of patties with crumbs. Fry in olive oil on medium heat till well browned on each side.
