Pickled Chop Salad

Ingredients
1 serving english cucumber - 1 whole (by TINAT51796) 20 serving Cherry Tomatoes, Fresh, 1 Tomato 1 large (2-1/4 per lb, approx 3- Sweet peppers (bell) 6 serving Eden selected Ume Plum Vinegar 0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
Directions
Chop vegetables into 1/4 to 1/2 inch cubes. Cut tomatoes in 1/2. Place in bowl, add vinegar and stir. Add herbs based on personal preference, cilantro and basil each work well. Allow to sit at least 1 hr and up to 3 days.
