Carrot Cake

Ingredients
8oz wholemeal self raising flour2 tsp baking powder4oz golden caster sugar1oz chopped walnuts1oz chopped toasted sunflower seeds4oz grated raw carrot2 ripe medium bananas, mashed2 medium eggs1tsp cinnamon1tsp mixed spice1/2 tsp ginger80-90ml sunflower oil1/2oz raisins15g icing sugarapprox 1tsp fresh orange juice
Directions
Add all ingredients into bowl and mix together. Cook for 50min - hour.

Mix together icing sugar and orange juice and using a spoon drizzle over the top.

Makes one 20cm diameter cake, pretty deep as well - cut into 10 generous wedges.
