Pecan Pie Energy Balls

Ingredients
50 gram Dates, Hadley Pitted Deglet Noor (5 Dates/1.4oz/40gm .5 cup, chopped Pecans 1 tsp Vanilla Extract 1 tsp Cinnamon, ground 3 tbsp Coconut, shredded sweetened
Directions
1. Soak dates in warm water for 10min
2. Chop dates in food processor then add pecans, vanilla and cinnamon and continue to blend into a paste.
3. Form 6 balls and roll in the shredded coconut.
4. Keep refrigerated.
