Spinach quinoa mini frittatas

Ingredients
12 medium Egg, fresh, whole, raw 1 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry 18 serving Taco Bell Fire Sauce, 1 packet 3 tsp Salt 1 cup, chopped Onions, raw 1 tbsp Canola Oil 2 cloves Garlic 1 package (10 oz) yields Spinach, frozen
Directions
Cook quinoa according to directions. Same with spinach. Meanwhile sauté chopped onion and garlic in oil. Let all cool and combine. Heat oven to 400. Spray muffin cups. After quinoa mixture is cool, add beaten eggs. Bake 20-30 min until set.
