Chorizo sausage ragout on kale

Ingredients
100 grams Onions, raw 335 grams Hertels chorizo sausage 3 clove Garlic 145.1 grams Eggplant, fresh 128 grams Zucchini, baby 4 serving Pacific Natural Foods Organic Diced Tomatoes, 1/2 cup 150 grams Kale 1 tbsp Grape Seed Oil
Directions
Remove sausage casings and brown sausage breaking it up as it cooks. Drain any excess fat. If there is not enough fat in the pan, put oil in pain, return sausage to pan and add garlic and onion. Brown together until onion softens. Add diced tomatoes, eggplant and zucchini. Cook to desired doneness- I like mine pretty soft. Add kale at the end and allow to wilt. I like to keep it a little firm to add bodyâ€" the kale acts like the vessel for the sauce. Serving Size: Makes 3 servings
