southwest corn chowder

1 large onion2 cup Beans, black 2 cup Yellow Sweet Corn, Canned 16 oz Kirkland Chicken Stock 1.5 cup, chopped or diced Broccoli, fresh 1 medium (2-1/4" to 3-1/4" dia.) Potato, raw 2 chipotle pepperscumin to tasteadobo to tastechili powder to tastepaprika to taste
in a large saucepan or pot
saute finely diced onion in 1 tablespoon oil until translucent
add cubed cube potatoes, chicken stock (or vegetable stock) and all of broccoli.
cook until potato is softened.
add chipotle peppers
blend all with an immersion blender until smooth
add corn and black beans (both drained if from a can)
add seasoning to taste
serve with chips, cheese and sour cream
enjoy!
