Ingredients
4 tbsp lemon juice1 med/large eggplant2 cloves garlic1/2-1/ cup parsley3 tbsp tahinisalt ( I like sea salt)
Directions
cut eggplant in half and place on cookie sheet. roast in oven skin up for 20-30 minutes until soft.
once the eggplant cools remove from skin and mash with potato masher or blend til smooth. add pressed garlic, lemon juice, parsley, tahini and salt to taste. blend until smooth. best served with pita bread. delish! beware of garlic breath though! lol

    I think raw garlic is too strong for the delicate flavor of eggplant. I use scallions instead. I also wrap the eggplant in foil and put it on the grill until it is completely black all over and very smokey tasting.
