566.0 Grams Eggplant, fresh1.0 tsp Salt0.5 cup Bob's Red Mill Almond Meal/Flour 1.0 large Egg, fresh, whole, raw
Sweat with salt. Pat dry. Coat with egg and dredges in almond flour. Let sit for min of half hour then spray with cooking oil and bake at 400 for 40 min turning halfway through baking
