Allium Soup

2 medium onions, cut in half and thinly sliced2 or 3 leeks, washed and thinly sliced (white part only)2 bunches scallions, chopped2 or 3 cloves garlic, crushed2 teaspoons minced fresh ginger9 cups water1/4 cup soy sauceFresh ground pepper to tastePinch ground cayenne
Place the onions, leeks, scallions, garlic and ginger in a large pot with 1 cup of the water. Cook, stirring, over medium heat for 5 minutes. Add the remaining ingredients, reduce heat to low, cover and cook for 55 minutes to allow the flavors to blend.
Variations: For a heartier soup, add two potatoes peeled and cut into chunks, when you add the remaining ingredients.
