WFPB Oat Flour Light and Crispy Waffles

3 cup Robin Hood Large Oat Flakes processed into oat flour1/2 tsp Salt 4 tsp baking powder1/2 cup tapioca starch or cornstarch3 cups non dairy milk (I use almond unsweetened)1 tbsp Cider Vinegar1 TBS Vanilla Extract 1 tsp Almond Extract 1/3 cup Maple Syrup
Process oats, salt, baking powder and tapioca starch to flour like consistency. In bowl add milk and vinegar, allow to set for 10 minutes or so. Add extracts and maple syrup. Stir milk mix into oat mix. Bake in waffle iron until golden. May take longer than usual.
