2 tbsp Butter, unsalted 3 stalk, medium (7-1/2" - 8" long) Celery, raw 1 cup, chopped Onions, raw 1.15 serving Peas, Birds Eye Baby Sweet Peas (2/3 Cup) 1 cup Green Giant White Shoepeg Corn 1 cup Imagine Organic Vegetable Broth 25 ml Fair trade organic coconut milk unsweetened 4.25 serving Cod - Peterson's Wild Cod Fillets (Serving Size 4 oz) 1 cup, whipped Heavy Whipping Cream 1 tsp MORTON Sea Salt, Fine Salt 1 tsp Thyme, ground 0.25 tsp Pepper, black
Melt butter in stock pot and add all veggies. Sauté until partly softened. Add broth and thyme, salt and pepper and simmer for 5 minutes. Cut cod or other fish into bite sized pieces and add to veggies. Heat through until cooked. Add cream and coconut milk and heat through. Add parsley and stir.
