Venison Stuffed Mini Peppers

8.0 oz Mozzarella Cheese, part skim milk0.5 cup, chopped Onions, raw1.0 cup Tomatoes, red, ripe, canned, whole, no salt added1.0 cup White Rice, long grain, cooked8.0 oz Venison, ground1 bag Sweet Mini Pepper (approx 8)
Brown venison in large pan
Add onions and sautee onion until translucent
Add diced tomato w/ juice and simmer until liquid is almost gone
Add cooked White Rice and stir to combine
Cut sweet mini pepper in half lengthwise then clean and pat dry.
Arrange peppers in a single layer in oven safe baking dish and cover with filling and cover with foil.
Bake 350° for 20 mins.
Remove foil, sprinkle Mozzarella Cheese on top.
Continue baking 10 mins to melt cheese.
Serving Size: Makes 8 stuffed mini peppers
