Blueberry Egg Strata

Ingredients
12 large Egg, fresh, whole, raw 2 tbsp Butter, salted 1 tsp Vanilla Extract 1 tsp Cinnamon, ground 6 tsp Splenda 1 tbsp Coconut Oil
Directions
Preheat oven to 375°F.
Separate eggs.
Beat egg whites until frothy.
Heat coconut oil in a large iron skillet.
Whisk together egg yolks, butter, cinnamon, Splenda, and vanilla.
Fold into egg whites.
Pour into heated pan.
Cook 2minutes.
Gently scatter blueberries onto batter.
Bake 15-20 minuets, until browned on top.
Remove from oven and allow to cool slightly before serving.
