0.25 cup Arrow Root starch/flour - For Chicken ONLY 2Tbsp Extra Virgin Olive oil-For Chicken Only1 tbsp ghee3 Cloves Garlic1 cup (8 fl oz) Chicken Broth 1.5 serving Lemon, fresh squeezed, juice of one whole lemon 6 tbsp, drained Capers, canned, rinsed1.3 cup Artichoke Hearts (in water) (by CSDART94) Season to taste with salt, pepper, onion powder, garlic powder(if desired)
After dredging each piece of chicken (4-5 oz ea) sautee in 2 tbsp olive oil set aside. Add ghee to pan melt. Add garlic, sautee until fragrant. Add chicken broth, lemon juice capers, artichoke hearts. Bring to gentle boil. Add chicken turn heat down and allow to simmer 15 -20 minutes or until sauce thickens. Adjust seasoning if needed. Top with a few slices of lemon & sprinkle with chopped parsley.
