Asian Tropical salad

Ingredients
20 oz. can of pineapple chunks 6 oz. baby spinach 1 lg. cucumber, sliced1 lg.granny smith apple, cut into thin wedges2/3 c. crunchy peanut butter1 1/2 tbsp. packed brown sugar2 tsp. coriander powder2 tsp. soy sauce
Directions
Drain pineapple chunks and reserve 1/2 cup of juice. Put spinach, apples, cucumber slices and pineapple chunks in large salad bowl.
Mix PB, pineapple juice, brown sugar, coriander and soy sauce until well blended, then pour over salad. Toss to coat and serve.
