1 tbsp Crisco Pure Vegetable Oil 1 serving 1 Med. Green Bell Pepper 1.5 tbsp Chili powder 3 tsp Cumin (ground) (by IVORYGRL1) 16 oz Ground beef 1 cup Tomato Sauce 1 cup Corn (Frozen) Whole Kernel -No Name (by BONBON1973) 0.125 cup milk, Kroger Skim Milk fat free 1 large Egg, fresh, whole, raw 1 serving 1/6 Box Jiffy Corn Muffin Mix (Prepared w egg and milk) 1 tbsp chopped Fresh Chives
1. Preheat oven to 400 degrees F. In a large skillet, heat oil over medium heat. Add bell pepper ; cook until softened, about 8 minutes. Add chili powder and cumin; cook about 1 minute longer.
2. Add ground beef and cook until brown and crumbly, about 4 minutes.
3. Stir in tomato sauce and corn; cook until heated through. Spoon meat mixture into a 10 inch pie plate.
Topping
1. In a large bowl, combine muffin mix, egg and milk; spoon batter into plastic bag and snip one corner. Pipe batter onto meat mixture in the shape of a cactus.
Baking
1. Sprinkle cactus shape with chopped chives. Bake until corn bread is browned and meat mixture is heated through, about 25 minutes.
