Bean & Cheese Quesadilla

Ingredients
2 medium flour tortillas1/4 cup refried beans1/3 cup shredded cheddar cheese
Directions
Heat a frying pan on medium on the stove.
Place one tortilla in the pan.
Spread the beans on the tortilla
Sprinkle cheese over the beans.
Place other tortilla on top
Cook for 3-5 minutes until the cheese begins to melt.
Flip over.
Cook 1-2 additional minutes.

Cut into triangles and serve.

Garnish with sour cream or salsa if desired.

    Very, very easy and delicious! I am making this for lunch again today. I used Low-carb tortillas and Kraft 2% mozzarella. Plan to make some fresh salsa to go with it next time I go to the store. - 7/13/08
