Smoked Gouda Chorizo Jalapeno Poppers

12 pepper Jalapeno Peppers 4 oz Cream Cheese 3 tbsp Sour Cream 1 large Egg, fresh, whole, raw 8 serving Boar's Head - Smoked Gouda Cheese - 1 oz 2 oz onions, raw, purple/red (1 slice) 3 tsp Sriracha Hot Sauce (Rooster sauce) 10 oz chorizo sausage
Finely chop the red onion and shred the gouda cheese. Fry up the chorizo (about 10m on medium-high heat) and drain. Reduce to low heat. Add sour cream, shredded gouda cheese, cream cheese, sriracha and 1 egg. As cheese melts, stir to combine. Remove from heat and allow to cool a bit. Half jalapenos and remove stems/seeds. Arrange halved jalapenos on parchment lined baking sheet and fill with the cheese mixture. Bake at 375 for about 20 minutes or until cheese is bubbling. Serve immediately.
