eggplant dressing

Ingredients
fresh eggplant peeled and quartered (3 or 4)white onion choppedfresh garlic 3 or 4celery chopped (3 or 4)brown rice 2 cupsyellow cheese 1 cupspicy sausage 1 lbground meat 1 lb
Directions
Boil your eggplant in salt water until tender. Brown your sausage and ground meat and drain.
Saute your vegetables until they are tender.
Cook your rice according to the directions on the package. Add all the ingredients together along with the cheese. Season according to your taste. Makes about 6 servings. You can al;so add fresh chopped tomatoes and more eggplant.
