Paleo Meatballs

Ingredients
1 large Egg, fresh, whole, raw 1 tbsp Oregano, ground 0.25 tsp Pepper, red or cayenne 4 tbsp Basil 1 tsp Salt 1 medium (2-1/2" dia) Onions, raw 1 serving Cashew Nuts, Raw (1/4 cup) 4 4 oz. (112 g) Clayton Organic Ground Beef 85/15 3 clove Garlic
Directions
Preheat oven to 400 degrees.
Soak cashews in 4 cups boiling water for 15 minutes.
Cook onions in a splash of oil until soft and beginning to brown. Add garlic, oregano, red pepper flakes and cook 30 seconds.
Place onion mixture, cashews, basil, egg, and salt into a food processor. Blend to a fine paste. Transfer to a large bowl and add ground beef. Mix with hands until well combined. Using and ice cream scoop, scoop some meat and roll into balls. Place on parchment lined baking sheet. Bake in oven 20 - 25 minutes until browned. Transfer to paper towel lined plate.
