Sarah's Corn Meal Pancakes

Ingredients
12 tbsp Alber's Yellow Corn Meal 2 tsp Raw Sugar - Sugar in the Raw 1 tbsp Butter, unsalted 1 cup (8 fl oz) Water, tap .75 cup Soy Milk 0.75 cup King Arthur 100% Unbleached White Whole Wheat Flour 1 large Egg, fresh, whole, raw 2 tsp Baking Powder .25 tsp Salt 1 tsp Cinnamon, ground
Directions
Heat up the water in the microwave to a boil; and mix with the corn meal, salt, sugar and the butter on a separate bowl; pour the water over the top and whisk well to combine; cover and set aside and let it stand for ten minutes. On a separate bowl, combine the milk and egg, and beat well. Stir into corn meal mixture. On a separate bowl, sift together the flour and baking powder and stir into the cornmeal mixture with a few swift strokes.

Serving Size: Divide the batter into 10 servings, about 1/4 cup per pancake
