Quick Broccoli Salad

Ingredients
4 cups, chopped small Broccoli and stalks, fresh 1/2 cup, chopped Red Onions 1 Tbsp. Sunflower Seeds, without salt 1 Tbsp. Pumpkin Seeds without seeds 1 Tbsp. Dried Cranberries 1 Tbsp. Sun Maid Golden Raisins 2 slices Bacon Hormel Black Label Low Sodium 4 Tbsp. Apple Cider Vinegar, Bragg's Organic 1 Tbsp. Hellmann's Mayonnaise 1 tsp Grey Poupon Dijon Mustard 1 tsp Stevia in the Raw
Directions
Cook bacon in microwave until crispy (save bacon fat, this should be less than 1/2 teaspoon). Cut bacon into small pieces. Chop Broccoli and stalks into small pieces. Cut onion into a small dice. In a bowl place broccoli, onions, cranberries, raisins, pumpkin seeds , sunflower seeds and bacon toss until well combined. In a small bowl mix vinegar, bacon fat, mayonnaise, Dijon mustard and Stevia. Beat with a fork to form an emulsion. Pour dressing over salad and toss until well combined. Cover bowl and place in fridge for at least 1/2 hour before serving. This salad will keep for 3-4 days in fridge.
