M A's Potato Soup

Ingredients
4-6 potatoes (chopped into small cubes) I leave some in quarters and mash them after cooking to make soup thickerChopped fine approximately 1/4 cup of each: carrots, celery and onions.2 cans evaporated skim milk 1 stick of butter 8oz of 2% reduced –fat shredded cheese
Directions
Boil potatoes and drain leaving about 1/4 cup of the water in the pot. (This keeps the flavor of the potatoes.) Pull the quartered pieces out and mash in a separate bowl and then add back to the pot. Over low to medium heat add the evaporated milk and vegetables. Cut the butter up into little pats and add to the soup. Let simmer until the veggies are semi soft. Add 3/4 of the cheese. Salt and Pepper to taste. Once cheese is melted serve into bowls with cheese sprinkled on top with some chopped green onion and crumbled turkey bacon if you want.
