Fish in yummy sauce

Ingredients
2 medium onions, chopped0.5 tbsp olive oil1 can chopped tomatoes2 fish stock cubes1/2 - 1 cup water1 tsp dried tarragon400 grams cod fillet
Directions
Soften the onions in the olive oil in an large, deep frying pan.Add tomatoes, stock cubes, tarragon and water, let simmer for 20 min.
Transfer all of above to liquidizer or use a hand held mixer. Puree until smooth. Return sauce to frying pan.
Add fish fillets, and simmer gently until fish flakes easily and is cooked through. Serve with plain rice.
