ABDubs Sesame Avocado/Cucumber Salad

Ingredients
1 Ripe Avocado (Haas California), chunked1 Med-Large Cucumber, quartered and chunked1 tsp Fresh Ginger Root, grated1 Sm-Med Lemon, juiced1 T Sesame Oil1 T Lite Kikkoman Soy Sauce (low sodium)3 T Seasoned Rice VinegarSalt and Pepper to tasteSprinkle Toasted Sesame Seeds (optional)Sprinkle Fresh Chopped Parsley (optional)
Directions
This is a simple recipe that I made up the other day and LOVED it. The dressing can be altered to taste, however I would not suggest increasing the sesame oil as that will increase fat/calories significantly.

Combine 3 T lemon juice*, sesame oil, soy sauce, rice vinegar, ginger root in a bowl and whisk. Store in the refrigerator while you prepare the cucumber and avocado. Peel the cucumber, quarter it the long way and then chop into 1/4" thick pieces. Remove the pit and skin from the avocado and slice into small chunks. Combine in a bowl and pour dressing over. Stir gently until coated and sprinkle with sesame seeds, parsley, and salt/pepper to taste.

*reserve the rest of the lemon juice and add as more if you feel it's necessary - I like a lot of lemon flavor and added about 3/4 of the liquid from a medium lemon - and a little lemon zest for good measure!
