CORN SALAD WITH LIME-CILANTRO DRESSING

Ingredients
2 cups fresh corn kernals (2 to 4 ears)1 tsp freshly minced garlic1/4 cup white wine1/2 cup canned black beans, drained & rinsed1/2 cup cooked boneless/skinless chicken breast, diced1/2 cup finely diced red onionLIME-CILANTRO DRESSING:2 Tbsp rice wine vinegar2 tsp lime juice2 Tbsp fresh, chopped cilantro1 Tbsp fresh, chopped parsley1/8 tsp cayenne pepper1/4 tsp freshly ground black pepper1/2 tsp salt (optional if watching sodium)
Directions
Braise the corn with the garlic in the white wine for about 5 minutes. When the corn is cooked, toss with the beans, chicken and onion. Mix the dressing and toss with the corn mixture.
Serve at room temperature.
