zucchini sausage pie

2lbs zucchini, grated1/2 lb turkey sausage, sliced3 cups fresh spinach1/2 c tomato, chopped1/4 c onion1/2 c whole wheat melba toasts, crushed.5 c egg substitute2 tsp garlic1/2 reduced fat cheese (i used "4 cheese italian mix" - Sargento)Parmesean cheese (about 3 tbsp)salt and pepper You can basically add what ever kind of vegetable you have on hand, red and/or green pepper would add good flavor too.
Preheat over to 350.
Saute sausage, zucchini, onion, and galrlic in pan over med heat until veggies are tender. Add Spinach until wilted then tomatoes. Mix together crushed melba toasts, eggs and italian cheeses. Spoon sausage and veggies into a 9 inch pie plate (or casserole dish). Pour egg in the egg mixture. Bake for 45 minutes. Sprinkle with parmesan cheese when there is about 10-15 left to bake.
I severed with home made- whole wheat garlic toast. (sliced bakery whole wheat bread,broiled after being lightly brushed with olive oil and chopped garlic)
