TK: Simple fruit syrup

Ingredients
1c frozen blueberries1t vanilla extract1/4c water
Directions
Place all ingredients in a pan and bring to a boil. Allow to simmer until fruit is mushy and some water has evaporated, about 10 minutes.

Place in a blender and blend until smooth.

Pour into a jar using a strainer lined with a coffee filter to discard fruit pieces keeping ony the juice.

Syrup can be used hot or cold and can be stored in fridge for up to a week.

    I was so happy when i found this recipe! I used strawberries instead of blueberries and it tasted so delicious. Much healthier than maple syrup, too. Next time I might add some splenda because it was a little more tart than I was expecting - 5/17/09
