Gluten Free Broccoli Cheese Soup

Ingredients
1lb Chopped Brocolli, fresh or frozen1 cup2 cups milk3tblsp butter or margarine1/3 c brown rice flour salt & pepper to taste
Directions
Bring 2 c water to a boil w/just a dash of salt
Add broccoli & cook for 10 minutes.
Add butter and stir gently till melted. Reduce heat to med/low, then add 1 c milk (whole milk makes this recipe creamier) . Mix remaining 1c milk with rice flour in separate bowl till smooth, (wisk recommended), then add this mixture to the broccoli. Stir gently till the soup starts to thicken, then add in the shredded cheese. Stir gently till cheese has melted and blended through the soup. Remove from heat, and let cool slightly before serving. Makes 6 - 1/2c servings
