Tomato, Fresh Mozz, Basil & Couscous Salad

Ingredients
2 cups freshly diced tomatoes3 oz diced fresh mozzarella cheese3 tbsp miched shallots2 tsp olive oiljuice of 1/2 a lemon1-1/4 cup water1 cup uncooked whole wheat couscous 1/4 cup chopped fresh basil
Directions
Combine first tomatoes through to lemon juice in a large bowl, cover and let sit in fridge for 30 minutes.

Boil water and add 1-1/4 cup to couscous. Remove from heat, cover and let stand for 5 minutes. Fluff and let cool. Add Couscous and fresh basil to tomato mixture, toss gently. Garnish with additional basil if you like.

Makes 5 - 1 cup servings.

    I enjoyed this recipe, but I was the only one in my family who did. I thought there could have been a little more of the dressing. It soaked in overnight and was a little dry but the flavor was still there. - 5/11/13

    This is good cold too as a cold salad, I tried heating it up and the tomatoes were SUPER HOT when I microwaved it! Super Yummy! I might add some black/Kalmata olives next time for a Greek flare :) - 1/25/09
