Ingredients
2 medium onions, diced4 cloves garlic2 bell peppers, diced2 small zucchini, sliced or diced2 small asian eggplants or 1 italian, diced (2 cups)2 medium tomatoes1 c. okra, sliced (optional)1 pound green beans (about 4 cups)1 T. fresh oregano or 1 t. dry oregano
Directions
Saute onions and garlic til translucent. Add rest of ingredients, except green beans, and cook covered but stirring occasionally til eggplant's tender (about 20 minutes). Add green beans and either let steam by re-covering and removing from heat (for al dente beans) or saute together 5-10 minutes.
