Whole wheat Buttermilk Blueberry Pancakes

Ingredients
1/2 cup, Whole wheat flour1/2 cup, White flour1 tbsp, Splenda1 tsp, Baking powder1/4 tsp, Baking Soda1/4 tsp, salt sense1 cup, 1% milk1 tbsp, lemon juice1, egg beaten2 tbsp, canola oilVanilla Extract to taste1 cup, Fresh Blueberries
Directions
In a mixing glass combine milk and lemon juice; let sit for several minutes.

In a bowl combine all the dry ingredients.

Beat the egg, oil and vanilla together. Add, along with the milk and lemon juice, to the dry ingredients. Mix well until batter is smooth.

Fold in blueberries. Scoop by 1/4 cupfull onto hot greased griddle and cook about 5 miutes per batch. Yields about 9 pancakes. (I have calculated the nutritional value for one pancake!)
